Garlic Chicken Tomato Tango


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts, diced into bite-sized pieces

  • 2 tablespoons olive oil

  • 4 cloves garlic, minced

  • 1 teaspoon dried oregano

  • 1 teaspoon paprika

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • 1 cup cherry tomatoes, halved

  • 1/4 cup chicken broth

  • Fresh parsley, chopped (for garnish)

Directions

  1. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.

  2. Add the diced chicken to the skillet and season with salt, pepper, dried oregano, and paprika. Cook for about 6-8 minutes, stirring occasionally, until the chicken is cooked through and browned.

  3. Remove the cooked chicken from the skillet and set it aside on a plate.

  4. In the same skillet, add the cherry tomatoes and cook for about 2-3 minutes until they start to soften and release their juices.

  5. Pour in the chicken broth and scrape any browned bits from the bottom of the skillet.

  6. Return the cooked chicken to the skillet, mixing it with the tomatoes and broth. Let it simmer on low heat for another 2-3 minutes to allow the flavors to combine.

  7. Remove from heat and garnish with freshly chopped parsley.
